Wee Bear loves MEAT BALLS!

Wee Bear's favorite meal= speghetti bolognese with meatballs

 Wee Bear's  Meatball's

1 lb. ground beef
1 lb. ground pork
1 lb. ground chicken
2 Tbsp finely minced onion*
3 cloves garlic, finely minced
1 Tbsp dried oregano
3/4 c. breadcrumbs
2/3 cup finely grated Parmesan cheese
1/2 tsp kosher salt
3 eggs

 40 - 2″ meatballs

Feel free to play with the proportions on the meats if you want, but this mix makes a flavorful, tender, and slightly healthier (lower in fat) meatball.
1. Preheat oven to 450 degrees.
2. Put all the meat in a large bowl. Using clean hands, mix in the onion, garlic, oregano, bread crumbs, cheese and salt. Mix in the eggs making sure everything is evenly distributed. 
 3. Roll out the meatballs. The ones I made were about 2″ in diameter and weighed 1.3-1.4 oz each. I used a scale to periodically check the weight as they had a tendency to creep up in size. I wanted them all to be even so they would cook evenly. Lay the meatballs out on a foil or Silpat, lined baking sheet.
4. Bake at 450 degrees for about 30 minutes until lightly browned and cooked through.
5. To have the most flavor, simmer in your marinara for 30 minutes.

* I  freeze them, and use a few at each speghetti dinner, or to make a meatball sandwich!!

Mountain man see's Sedona! We had a great ride up to Sedona, lunch at Heartline Cafe, then up to the airport, for the best views! Wee Bear and Mountain Man went up in a helicopter to see the red mountains up close! I stayed back as last time I did this (in a bi-plane) my stomach flipped!




They had a great time!!  Joe, their pilot gave them lots of history.

Millions of years ago, the area now known as Sedona was covered with sea. Ever so slowly with the gradual withdrawal of the waters combined with the earth’s powerful forces of upheaval, this masterpiece of nature was created. Sculpted by wind and erosion, the crimson monuments of vividly colored mesas were formed. Today Sedona is brightly adorned with panoramic beauty so unique it doesn’t exist anywhere else in the world.



From Sedona we drove to Jerome, an old copper mining town.





This is where the ladies of the evening were ...in the day.......

Located at the top of Cleopatra hill, it is called the mile high  city. There are many historic hotels, Connor Hotel, Ghost City Inn, Jerome Grand Hotel, Inn at Jerome, Hillside House and Cottage Inn. A few years ago, Wee Bear and I stayed two nights at the Jerome Grand Hotel, over Halloween, which is the old asylum. We had a lot of fun, with the antique gurneys loaded with corpse's and lots of other fun decorations in the restaurant and hallways of the hotel.


* I will be taking the weekends off, effective March 30. See you on Monday April 2!
