My family loves Caprese, but, are always looking at ways to cut the calories and fat. This is a great way to make it healthy and it is transportable for a picnic or pot luck! Wee Bear likes to nibble while I am preparing dinner, he usually goes to the snack drawer, picks out some chips and has a few before dinner. I like to make these before dinner, so he has a lighter, healthier appetizer. These would be a nice lunch too. They are very easy!
Romaine Caprese Boats
20 little cherry tomatoes
20 medium basil leaves
1 T extra virgin olive oil
2 T freshly minced garlic
2 tsp. Italian seasoning
1 tsp. Kosher salt, divided
1/2 tsp. black pepper
20 Mozzarella Pearls
Cut cherry tomatoes in halves.
Combine Tomatoes, basil, extra virgin olive oil, minced garlic, Italian seasoning, and sea salt in a large bowl.
Add Mozzarella cheese pearls. Mix it up well, cover with plastic wrap and refrigerate for 4 or more hours.
Wash the Romaine and peel off each leaf, one at a time. Fill with Caprese mixture and serve. Mmmmmmm What a cool Summer appetizer salad in a boat!

I loved this performed at the London Olympics, I've also seen this in New York and Seattle performed by Monty Python in Spamalot. The melody sticks in your head, I just love it! Look it up on UTUBE if you haven't listened to it. A great motto, a good way to start our week!

FYI- Pearls are also at Albertsons and QFC or you may cube mozzarella.
ReplyDeleteI ended up getting the mozzarella pearls from Whole Foods because I needed something else from there.
We had the “boats” this evening…..and, just like you said…..quick, easy, so pretty, and DELICIOUS!!
