Back to health Monday! Caprese Boats!



 My family loves Caprese, but, are always looking at ways to cut the calories and fat. This is a great way to make it healthy and it is transportable for a picnic or pot luck! Wee Bear likes to nibble while I am preparing dinner, he usually goes to the snack drawer, picks out some chips and has a few before dinner. I like to make these before dinner, so he has a lighter, healthier appetizer. These would be a nice lunch too. They are very easy!


Romaine Caprese Boats

1 head of Romaine lettuce       
20 little cherry tomatoes
20 medium basil leaves
1 T extra virgin olive oil
2 T freshly minced garlic
2 tsp. Italian seasoning
1 tsp. Kosher salt, divided
1/2 tsp. black pepper
20 Mozzarella Pearls


Cut cherry tomatoes in halves.



Wash and chop your basil into one inch pieces.



Combine Tomatoes, basil, extra virgin olive oil,  minced garlic, Italian seasoning, and sea salt in a large bowl.

 

Add Mozzarella cheese pearls. Mix it up well, cover with plastic wrap and refrigerate for 4 or more hours.

Wash the Romaine and peel off each leaf, one at a time. Fill with Caprese mixture and serve. Mmmmmmm What a cool Summer appetizer salad in a boat!


This one is definitely being added to my Summer easy to prepare and simple recipes file. Whether it is a lazy day, or event filled one. This effortless recipe is healthy and delicious and has eye appeal, all rolled up into one Romaine leaf! We really enjoyed this appetizer/salad while lounging around my daughter and son in law's beautiful back yard, sipping wine and relaxing. I just love Summer in the Pacific Northwest!

 I loved this performed at the London Olympics, I've also seen this in New York and Seattle performed by Monty Python in Spamalot. The melody sticks in your head, I just love it! Look it up on UTUBE if you haven't listened to it. A great motto, a good way to start our week!

  1. FYI- Pearls are also at Albertsons and QFC or you may cube mozzarella.
    I ended up getting the mozzarella pearls from Whole Foods because I needed something else from there.
    We had the “boats” this evening…..and, just like you said…..quick, easy, so pretty, and DELICIOUS!!
