Mexican Stacked Dinner! Ole!



 Football Season is upon us, and this is perfect for munching on during game. Chances are good you have a member of your household chomping at the bit, to watch football!!  Unless you live in another country, in which case you likely could care less about an American football game! This is also the perfect dinner for the kids! With school starting soon, this would be a fun to eat, one dish meal!





It’s the exact same Mexican Stacked dinner I was making in the seventies, with the exception of these modifications:
1. I don’t crack open a can of refried beans and plop them, cold, right onto the platter, then microwave.
2. I don’t use that frozen guacamole stuff that stings the tongue from all the citric acid.
3. I don't add 2 tablespoons of sugar
4. And I do not add 2 tablespoons of Accent

But other than that, it is the same!  Hahaha!



Mexican Stacked Dinner
2 lb. ground beef or chicken  (Wee Bear loves his beef)
1 large onion chopped
2 cloves of garlic minced

Brown these together in a large skillet.



2 T. chili powder
2 T. cumin
2 T oregano
2 small cans tomato paste
2 small cans tomato sauce
2 c. water


Add the remainder of the ingredients, bring to a simmer and allow to simmer for 1 hour.


2 pkg. tortilla chips (to make this a healthier meal, cook up some brown rice instead)
1 head of lettuce shredded
3 c. shredded cheddar cheese
2 bunches of green onions chopped
4 tomatoes diced
2 sliced avocados
sliced black olives
chopped celery
chopped jalapeno (this can be added to the sauce or used as a topping, remember to use your rubber gloves to seed and chop)



                                             
 

 Let's have a fiesta!!



Layer the tortilla chips on your plate, cover with meat mixture. Layer the cheese then the remainder of your condiments.




Yum. That’s all I can think of to say!


~I learned to  make my own Chile Powder when I lived in Mexico: 16 dried New Mexico Red Chile pods, stems removed. Place 2-3 pods in a blender and finely grind them on low speed. Add more pods until the lower portion of the jar is full. Empty container and continue to process until all pods are ground. *Note: The more seeds you leave in the pods the hotter your chile power will be.
