Sweet One decided to have another dinner party a week or so ago, and we were bantering back and forth on what to serve. Wee Bear and TT unanimously said, "MUD PIE" for dessert!! I thought that's easy, I'll do that!!
This Mud Pie recipe has all the sinfully
delicious favorites in one pie. Chocolate, coffee, almonds and cream together
create a tantalizing frozen confection. This pie is quick and is so so delicious! This
is the type of dessert I'd bring to a friend's house for a dinner
party. It's fancy enough for a special occasion, but its little
imperfections give it a casual, homemade vibe. It's subtle enough that
even non-coffee lovers will enjoy it.
Ingredients:
1/2 package Nabisco Chocolate Wafers*(Oreo's could work as well)
1/4 cup butter, melted
1 quart Jamoca almond fudge ice cream, or coffee ice cream softened ( I used Jamoca from Baskin and Robbins)
1 c. Chilled Best ever fudge sauce
Sweetened whipped cream or purchased whipped topping
Slivered almonds
cocoa powder for garnish
* May substitute prepared chocolate-cookie crumb crust
*Best ever Hot Fudge Sauce
1/4 cup butter, melted

Preparation:
In a food processor, pulse chocolate wafers to fine crumbs.
Put the crumbs into the pie plate and add butter mix and press crumb mixture firmly and evenly. Sort of feels like playing in sand!!
Spread softened ice cream into the cookie lined pie plate. Freeze until ice cream
is firm.
Top with the fudge sauce. Place in freezer approximately 2 hours to set.
Serve frozen. Slice into eight (8) portions and serve on chilled individual dessert plates with chilled forks. Top with prepared whipped cream or whipped topping. sprinkle slivered almonds over the top of each portion and use a sieve to shake a bit of cocoa powder over the whipped cream.
Cut the pie into 8 servings.
The
good news on chocolate keeps coming. A new meta-analysis from the
Cochrane Collaboration showed that eating dark chocolate may reduce
blood pressure. I am blessed with very low blood pressure, but, for my
friends and family who are not, this is good news!
In an overview of 20 previously-conducted studies, the report found
that volunteers who consumed dark chocolate or cocoa powder saw small
reductions in blood pressure, ranging from 2-3 mm Hg. It's not much, but
it's enough for the researchers to call "statistically significant" (so
effusive, those scientists), saying it might contribute to a reduced
risk of cardiovascular disease. Which means you'll probably want to try
this recipe! For your health, of course!

This was so good!! TT and I enjoyed the little bit left over the week after the dinner. TT says next time, double chocolate cookie crust, haha!
