Pulled pork Bruschetta or sliders! Superbowl!




The ultimate post holiday party is about to happen! Superbowl Sunday  is almost here!! It happens once in a blue moon, but the Super Bowl and Mardi Gras are converging on New Orleans to bring a party of epic proportions. Mardi Gras and Superbowl in New Orleans on the same weekend!! 

These slow cooked  Pulled Pork Sliders or Pulled Pork Bruschetta make a great appetizer for game day or any gathering.




From Sarah- I made these flavorful appetizers when JJ & Wee Bear visited my husband and I at our very first house over the 4th of July back in 2010.  We, now, live in our second home and have since been blessed with our first child, Emma (7 mos).  When she is old enough, I can’t wait for Emma to enjoy some tasty BBQ Pulled Pork Bruschetta with all of us.


 

From JJ- Instead of making the delicious Bruschetta, Amy and I made sliders for the Seahawk/49er playoff game party at one of Amy and TT's neighbor's home. I made the pork in my slow cooker, and have shared that recipe below. However, you can buy pork by the pound at some grocery stores.

Note~ We have used Sarah's recipe as a guide for our sliders, you can do either for SUPERBOWL SUNDAY! 

Pulled Pork Bruschetta or sliders

Ingredients:

Olive oil
2 T Butter
1 1/2 lb. onion, sliced
1 loaf French bread, sliced into 1/2" slices or slider buns
2 cloves garlic, smashed
salt and freshly ground pepper
1/2 lb. pulled pork
Barbeque sauce (Sarah highly recommends Bulls Eye BBQ Sauce)
Chives, sliced for garnish

Directions:

Pre heat grill to high

For Onions- In a large saute pan over medium heat, add 2 T olive oil and butter to melt. Add the onions and saute, stirring constantly, until the onions are deep brown in color, about 20 minutes.

For Bruschetta- Brush the bread slice's with olive oil. Rub the garlic clove on the bread and season with salt and pepper. Place on grill in a single layer and cook until golden and crisp then repeat on the other side. Remove from grill and let cool slightly.



To serve- Top each piece of toast/bun bottom with a heaping spoonful of pork. Top with a spoonful of onions. Place a dollop of barbeque sauce on top of the bruschetta and garnish with chives.



This party was pot luck....I love pot luck! It is still a lot of work for the host and hostess, but, everyone bringing a dish, really helps in the planning! Some of the dishes included in this buffet are chili, cornbread, Spinach salad, vegetable plate and numerous desserts.



 How to make the Pork- JJ's Slow cooker pulled pork


 Ingredients:
  • 2 medium yellow onions, thinly sliced
  • 4 medium garlic cloves, thinly sliced
  • 1 cup chicken stock or low-sodium chicken broth
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon chili powder
  • 1 tablespoon kosher salt, plus more as needed
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1 3-4 lb boneless pork shoulder (also known as pork butt), twine or netting removed
  • 2 cups barbecue sauce (optional)

Instructions:


Place the onions and garlic in an even layer in the slow cooker and pour in the stock or broth. Combine the sugar, chili powder, measured salt, cumin, and cinnamon in a small bowl. Pat the pork dry with paper towels. Rub the spice mixture all over the pork and place the meat on top of the onions and garlic. Cover and cook until the pork is fork tender, about 6 to 8 hours on high or 8 to 10 hours on low.

Turn off the slow cooker and remove the pork to a cutting board. Set a fine-mesh strainer over a medium heatproof bowl. Pour the onion mixture from the slow cooker through the strainer and return the solids to the slow cooker. Set the strained liquid aside.

If the pork has a bone, remove and discard it. Using 2 forks, shred the meat into bite-sized pieces, discarding any large pieces of fat. Return the shredded meat to the slow cooker, add the barbecue sauce, if using, and mix to combine. If you’re not using barbecue sauce, use a spoon to skim and discard the fat from the surface of the strained cooking liquid, and then add 1/4 cup of the liquid at a time to the slow cooker until the pork is just moistened. Taste and season with salt as needed. 

Whether you're a football fanatic or are only hoping to catch the halftime commercials and Beyonce, Amy and I have the game-day fare to make your party a hit. Keep them munching from kickoff to the final whistle with some of these delicious dishes!

These are some great ideas for Superbowl. And you 100% have to serve them or bring some of them to your Super Bowl party. People will be talking about you and your dish all year long. People might even forget there is a football game on and just hang out around the table with these delicious dishes!!

PS~ Wee Bear And I will be on a plane to our annual "Ocean Fix" in Ocho Rios, Jamaica. We will arrive in time for the game, but, most likely will be dead tired. With Wee Bear and I, you never know, we could stay in our cottage and watch the game or go to the party........yet to be determined! But, no worries for you, I have all blogs ready for a month!!
