This is going to be a simple blog with a simple recipe but bear with me, I’m going somewhere with this. Sort of....... A couple of years ago a few of my adult children and I met in Lake Tahoe for our annual ski trip. As usual we had a wonderful time. While there, we had the pleasure of dining at a wonderful restaurant in the Squaw Mountain Village, which is since gone out of business. We had incredible food, however, the thing that has stuck with us most about our meal there, was the popcorn. That’s right. The popcorn! Totally decadent, truffled popcorn.
We have been trying to replicate this recipe for several years! YES YEARS people! And today, I am giving you our findings. Those who have helped to perfect this ..........Laura, JJ and Amy. I’m not such a fan of conventional microwave popcorn bags, but, if you’re okay with all that additional stuff in traditional microwave popcorn then go for it.
Wee Bear and Amy decided to make two batches of popcorn. One with salt and butter(Wee Bear and TT's favorite), the other with white truffle oil and Parmesan cheese......the girls favorite!
1/2 c. popcorn kernels
2 T vegetable oil
4 T. Butter melted
1 1/2 T white truffle oil
3 T. Parmesan cheese
1 tsp. salt
Italian parsley chopped (optional, JJ addition)
Put the lid on and let it pop on medium high heat. It will take about 2-3 minutes.
While the popcorn is popping, melt the butter and combine with the truffle oil. Mix all the ingredients together..........enjoy!

There are some big football games this month, this is a perfect delicious and healthy snack to make.

Truffle Oil-- mostly olive oil, there the same health benefits such as: protects against heart disease, can lower blood pressure, rich in polyphenols which act as antioxidants and anti-inflammatory Parmesan-high in protein, low in carbs, great source of calcium and phosphorus.

Our Olympic Bobsled Ride Experience began with a sport orientation, including helmet fitting, track etiquette, safety guidelines and a mock run. Once given the green light, the WSC Track Crew member secured the sled for take-off. And with guidance from our professional pilot, we were released for the run of our life. Listen viewers..... you are on the same track that the 2010 Olympians competed in! How awesome is that?! As we accelerated down the track, we reached the tenth and final corner at a speed of 130 km/hr + and pulling 4G's. I can tell you, it was difficult for me to keep my back upright, as the force was pulling my head and shoulders down into the sled. I had never had such an experience! Wee Bear and I had done the bobsled in Austria and it was fast, but, not this fast. The uphill outrun slowed us to a safe stop at the finish dock, where the Track Crew assisted us with the sled and our exit.The force of 4 G's and the sled going up on the walls at the corners, at this speed is an exhilarating experience, that can leave you woozy but, excited, with many wanting to go again.

You want a Adrenalin rush? Just do this!! Availability is somewhat limited, so first thing, you need to pre-book before you get to Whistler if you really want to do this. It works out to about 180.00 per person with taxes.
The snow continues to dump on us here, it is powder skiing heaven! We are enjoying the snow, the skiing, the tubing, the food, cards after dinner and each other. Family and friends................love!
