Cashew mango salad!






Right now Whole Foods and my local Safeway is featuring Ataulfo mangoes, also known as champagne or yellow mangoes, in their stores. Mango is my very favorite fruit, in fact I eat one or more every day!!  The health benefits are many including preventing the deadly cancer, clears the skin, lowers cholesterol, alkalizes the body, improves sex, helps diabetes, improves digestion, boosts the immune system and one cup of sliced mangoes supplies 25 percent of the needed daily value of vitamin A, which promotes good eyesight and prevents night blindness and dry eyes. WOW!! Hard to believe these little innocent looking fruits can do all these wonderful things for us!!



I think this is the perfect salad for a starter for your Cinco de Mayo party! 





Ingredients:

3 Ataulfo mangoes (or 2 regular mangoes,) peeled & chopped
2 avocados, peeled & chopped
1/2 cup cashews

1 bunch of green onions, sliced
1 Jalapeno pepper diced
1/2 English cucumber diced
12 cups mixed lettuce


Agave-Lime Vinaigrette:
1/4 cup lime juice
2 Tablespoons honey
salt & pepper
2 Tablespoons extra virgin olive oil


Directions: For the Honey-Lime Vinaigrette: Combine lime juice, Agave, salt, and pepper in a food processor or bowl. Stream in olive oil while processing, or slowly add while whisking. Taste and adjust seasonings if necessary.




Divide lettuce between plates then top with mangoes, avocados, chopped green onion, Jalapeno pepper and 2 Tablespoons cashews each. Drizzle with dressing and then serve.


* For lunch you could add shrimp or chicken! 




A three day tournament with friend Wendy, who flew in from Cabo San Lucas. I thought I'd share some photo's, I took many more of various events that took place over the three days. We placed every day of the tournament! The final day we came in 2nd net overall! 91 teams in this event, it is spectacular!


This gorilla came up the fairway halfway through our second day round with a bunch of bananas!

We had a lovely dinner of filet and salmon cake  followed by this adorable dessert and a tray of truffles!


Wendy and I jumped up on the wall for some dancing at the dinner/party!
