Watermelon and Spinach Salad!






One of the great things about the summer is the availability of local produce, that I have talked about in many of my blogs. Nearly everyone loves watermelon and with the seedless varieties, they’re really great to use in salads. I love this salad that was introduced to me at Pearl Laguna spa. It is low fat, low calorie, vegetarian and gluten free...........and it is full of flavor!! 



Watermelon and Spinach Salad  

1 organic watermelon peeled and cut into chunk
Organic baby spinach
1 T. grapeseed oil (flax oil or olive oil substitution)
Feta cheese (French if available)
Pistachio nuts (optional)
Coarse sea salt and pepper to taste

  Toss pieces of watermelon in a large bowl with the spinach.



 In food processor or blender pulse together the grape seed oil and several chunks of watermelon, to make the dressing. Drizzle over the salad. Finish with Feta, nuts, salt and pepper. Remember that this salad is only as good as the ingredients you put in, buy the best available

I just love this salad! It is light, simple and just screams Summertime!

                                              
Our Summer could not have been better! As we think back to the beginning of Summer 2013, we were thrilled to welcome a new Grand baby, Jacob Ross on June 4, then on July 27 at 12:01 AM we welcomed Madison Lee. In between babies we toured wineries, spent a week in Eastern Washington on Lake Chelan, did a road trip to visit family and friends in Washington and Oregon, flew to Vegas to be Matron of Honor and Best Man in our friend's wedding, lot's of boating around Lake Washington, hiking, museum touring and many dinners with family and friends. We are planning an action packed Labor Day weekend with family, and in the next two weeks I will be giving you ideas for your picnic or barbeque! 

On another note, Sweet One is expecting!! YES!!! We couldn't be more thrilled! Amy and Dustin are expecting their little baby boy, Cooper Owen, early January! Amy will be blogging when she has time, but, is going into semi retirement from the blog world!! Wee Bear and I are so happy, our family is growing and Christmas promise's to be exciting with all the new little ones! Yippeeeee!!

  1. Flax oil!! Great idea and I'm going to try watermelon, I love this salad, we had pears in our spinach salad tonight, and I found a low fat pear gorgonzola dressing!! Thanks for the flax oil idea! Steph S
