I splurge every once in a while when I am shopping at Pasta and Co. in Bellevue, Washington and I buy a apricot bar. I love them and thought........Hmmmm I should make a few for my daughter, as she has been wanting sweets with oatmeal. She could have them for a yummy dessert or a fun breakfast treat. They are quite tasty and the apricot is a nice change of pace from my normal flavor palate. I made up a batch and served in a dessert buffet for a party we recently had, then, I packaged up the left over's and sent them home with her. She and Nate were so happy!
Ingredients
- 1-1/2 cup Flour
- 1-1/2 cup Oats
- 1 c. Packed Brown Sugar
- 1 tsp. Baking Powder
- 3/4 tsp. Salt
- 1-3/4 stick unsalted butter
- 1 jar (10-12 Ounce) Apricot Preserves
Preparation Instructions
Blend together all ingredients except apricot preserves with a fork.
Press one half of the mixture into a buttered 8” square (or small rectangular) pan.
Spread with the jar of apricot preserves. Sprinkle second half of mixture over the top and pat lightly.
Bake at 350 degrees for 30-40 minutes or until light brown. Let cool completely, then cut into squares.
