Over the holiday weekend, because we had a house full of our children and grandchildren, I made a batch of pumpkin pancake batter and some cranberry syrup.Yum!! Let me tell you it went over big!! Oh my, these are probably the best pancakes ever!! And the cranberry syrup was outstanding.
1 1/4 c. all purpose flour
2 T sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. ground ginger
1/2 tap salt
1/8 tsp nutmeg
a smidge of cloves
1 1/2 c. buttermilk
6 T pumpkin puree
1/2 c. chopped pecans
2 T melted butter
1 egg
In a large bowl, combine flour, baking powder,cinnamon, nutmeg,cloves and sugar. Stir together and set aside.
In a separate bowl, whisk together pumpkin puree, egg, butter and milk. Slowly drizzle wet ingredients into dry ingredients, stirring gently with a spoon as you go. Add the pecans. Once combined, if mixture needs more moisture, splash in a little more milk. Batter should be pourable.
Heat large skillet or griddle over medium-low to low heat. Smear a little bit of butter over the surface and drop tablespoon-sized amounts of batter onto the pan (more if you want larger pancakes.) Wait a minute or so, then flip to the other side. Pancakes should be light golden brown and set in the middle.

Cranberry Syrup
1/2 C. cranberry sauce, home made or from a can
1/2 c. pancake syrup
1/2 tsp. orange zest (optional)
Heat a small pan on low heat. Add all the ingredients and stir together.

The pancakes went over so well on Friday morning, that I decided to make "Mickey Mouse" waffles with the pumpkin batter on Sunday for their send off back to their homes. They loved them! Together we counted the grapes into a baggie for the trip home. It was sad to see them leave, but, we sure had a lot of fun! Now it's time for a nap!
These make a perfect option for the holiday season. Christmas morning or any morning!
