Last week end was a huge football weekend for Seattle and I got caught up in the excitement with our local team, the Seahawk's, who as it turns out, are going to another Super Bowl!! Yahoo! We had one more hurdle ahead of us, the seemingly insurmountable San Francisco Forty-niners.
The final four teams, each pair fighting for their conference championship, had never been more evenly matched. I am constantly amazed by the finger tip catches, the tip that goes to the opposite team, the great run or an amazing tackle. I want my team to win, however I love the epic battle with two evenly matched teams! Both games proved to be just that, an epic battle with both sides biting their nails!
As much fun as the Super Bowl is and all the hype surrounding it, the pure rivalry at the conference championships is palpable and much more nerve-wracking for the players than the big game, in my opinion. That was the big game to win – the Super Bowl is icing on the cake. My Seattle Seahawk's will be playing the Denver Bronco's on Superbowl Sunday and that is the "icing on the cake"!
So, you may be asking (if you are still reading), what does all this football talk have to do with food? For me, there is no better captive audience for my cooking and baking than a room full of yelling, fist-pounding big eaters. I love creating a buffet of food that is geared for grazing and nibbling. Nothing can be more than a bite-or two big because everyone has to be able to scream and jump up during the game. A wide variety of delicious comfort foods, nothing too fancy, and filling, that's what will make everyone happy! I will provide a few good choices over the next week. I however, will not be having the party this year, I will be wheels down just hours before the game in Jamaica! No worries, our friends there are arranging a big party and we are bringing in a load of Seahawk Tee shirts and gear!
To start the Superbowl food frenzy I chose to make everyone happy! These golden cheddar biscuits drizzled with parsley garlic butter taste a bit like Red Lobsters without all the calories and fat! My figure friendly crowd and my "bring it on" crowd will be happy with this one! These buttery biscuits will go perfect with a bowl of White Chicken Chili (figure friendly)for the "Big game"! Another option is Rosemary Chicken Chowder, both soups can be put into the slow cooker, are easy to make and you can enjoy the game, as your guests graze!
Skinny Cheddar Biscuits
2 T. butter, melted
4 cloves garlic, minced
3 T fresh chopped parsley
2 c. Heart Smart Bisquick
3.5 oz. shredded 2 % sharp cheddar cheese
2/3 c. fat free milk
Pre-heat oven to 400 F. Line a cookie sheet with a Silpat or parchment paper.
Melt butter in micro wave and add the 1/2 the garlic and parsley.
In a large bowl, combine biscuit mix, cheddar cheese, and remaining garlic and parsley. Stir in milk and mix until "just holding together". Drop batter by heaping tablespoons full onto prepared cookie sheet.
Bake for 10 minutes. Brush biscuits with melted butter. Bake another 5 minutes, until lightly browned.
