I mixed some Hellman's mayonaise with some herbs, salt, pepper and toasted the Brioche roll just slightly because of the extra softness being lent by the lobster salad. I thought it was important to get a crispy textural layer in there. I spread the roll with the chilled lobster salad, and some sliced tomatoes. A whole lot of texture and oh so good! For added texture, add some Butter Lettuce(I didn't have available).
For two sandwiches I mixed-
1/4 c. Hellman’s Blue Ribbon original (Best foods)
1/3 of a pound of cooked chopped lobster meat
1 small chopped shallot
1 T snipped chives
1 1/2 tsp tarragon
1/4 tsp. sweet paprika
salt and freshly ground pepper
3 slices of cooked crumbled bacon
Spread on a Brioche Roll
Top with-
Sliced tomatoes
optional lettuce
This delectable sandwich is so delicious and really hit the spot! Of course, when you add lobster to anything, there is no way it won't be great!!

It actually malfunctioned while we were in Jamaica and our driver took it to a local shop in Ocho Rios, they fixed it for $50.00!! I took several shots of the "Red Stripe" that I staged! It would never had lasted if it just rolled in on a wave! It was a fabulous sandwich!! I ordered two lobster tails the night before at Evita's, ate one and brought the other home to our cottage at Jamaica Inn. Also, for those reading this post, lobster tails are available at the Montego Bay airport, 2 for 24.00 with freezer packs, after you go through security. I would have bought, but, our flight is about 11 hours with the layover in Miami. I didn't want to risk having it spoil. thanks for commenting! Cheers! JJ
