Cinnamon Toast Pancakes- Figure Friendly!





A better breakfast can make all the difference. It powers up your metabolism, regulates your blood sugar, and is just plain delicious. So why not pull out the griddle and make some pancakes? These breakfast delights can still be healthy while tasting like a decadent treat! Yes folks, it's back to health Monday!



These delicious pancakes are loaded with heart-healthy almonds and milled flax seed that is loaded with omega-3 fatty acids. Pancakes can be part of a healthy breakfast if you use a few tricks to make them a little better for you by adding whole grains and using low-fat or no dairy. They’ll still be delicious and will be much healthier for you than a traditional stack of white-flour cakes smothered in butter and syrup. This recipe I found on Dr. Oz, oh my gosh are they good! They even got the stamp of approval from Wee Bear! Woo Hoo!

Cinnamon Toast Pancakes
Dr. Oz

Makes 4 servings

Batter
2 large eggs
1/4 cup water
1 T vanilla extract
1/2 cup almond flour
1/4 cup milled flax seed
1/4 cup bulk sugar substitute
1 tsp baking powder
1/8 tsp salt




Cinnamon Sprinkle
1/4 tsp cinnamon

1 T bulk sugar substitute
Butter (may use light, trans-fat free buttery spread)
Fresh blueberries or strawberries, for garnish

Directions
Grease a griddle or large skillet with vegetable oil spray and heat over medium-high heat.


Mix all the batter ingredients in a bowl with a wooden spoon until well blended, in a blender or with electric mixer. Use what you have, I am in Jamaica and have a blender.



Pour approximately 16 mini-cakes onto the hot griddle, and cook on the first side for 3 to 4 minutes until almost done, and then flip and cook for just another minute or so to finish. 





Combine the cinnamon and sugar substitute and sprinkle over the hot cakes before serving.  If desired, top with a pat of melted butter, fat-free margarine, Brummel and Brown spread or garnish with fresh berries. Another healthy option, drizzle with a small amount of light agave nectar for a low-glycemic take on syrup without the sugar alcohols found in sugar-free maple syrups.

Parties, dinners, lots of walks on the beach, golf, old friends, new friends and our second family, many massages and just being with each other, being pals and being in love...........
