Steamed Asparagus with Lemon Yogurt Sauce- figure friendly!




It is Spring!  I am offering a veggie to get excited about .....asparagus! I have always loved these beautiful long slender stalks of goodness. It is definitely one of the signs of Spring for me! Today, I am offering a new take on my Asparagus with Pineapple buerre blanc, a healthier version, that is figure friendly! 

 

Steamed Asparagus with Lemon Yogurt Sauce


Makes 4 servings


1 lb. asparagus
1/4 tsp sea salt
2 oz Greek yogurt
3 T grape seed oil
1/8 tsp. white pepper
1/16 tsp. sugar
1/8 tsp. sea salt
2 minced garlic cloves
3 T lemon juice









Make the dressing by whisking the yogurt, grape seed oil, white pepper, sugar, salt and garlic together in a small bowl. Refrigerate until you are ready to serve.




Clean the asparagus, snap off the tough ends and nip off the frongs. 




Steam the asparagus with a bit of sea salt to help preserve the color. When just done, run cold water over it, to refresh the color.


Serve asparagus with sauce over the top and garnished with snipped chives or lemon zest.
