Cranberry Syrup for your Holiday Breakfast!





I have a delicious and festive topping to share with you, this week! Homemade Cranberry Syrup! A sweet cranberry syrup with a touch of true bitterness from the berry. This is so perfect with my Pumpkin pancakes, waffles, ice cream or my Granola pancakes


I had  planned on making this for a while, and the perfect opportunity came up, our son, his wife and our grandchild, Emma came up from Oregon for the Thanksgiving holiday. I thought this would be festive and easy. I wanted to create a syrup from cranberries that is a bit more tart than the syrup I made with the pumpkin pancake blog. I did and it was delish!! In fact it was requested again over the weekend!!



I want to suggest that you make this ahead for Christmas breakfast, it is really yummy and the color is perfect for the Christmas season!

Cranberry Syrup


  • 2 Cups Fresh cranberries
  • 2 1/4 Cups Water or 1/2 cranberry juice and 1/2 water
  • 3/4 c. sugar
Bring to a boil, stirring often. Simmer about 30 minutes. 



Add sugar, simmer until thick, about an hour. You can adjust sweetness by adding more sugar. If you would like it smooth, just put it in your food processor or blender for a few quick pulses.

So cute!! Emma loved my pumpkin pancakes and the "Special dip"!!

Hmmmm Not so sure Santa will agree!!
