Cole Slaw by JJ





Last weeks blog showcased my "Slider Bar" , that was so much fun! I have been bombarded with e-mails for various recipes used! I didn't know where to start, so, don't be mad if this one is not "THE ONE'! I will get to all of the components of this fun event in the next few weeks, hopefully in time for your event! I don't know about you, but I'm in need of a bit of relaxation, particularly after the Fourth of July festivities. So, I'll be heading to the lake Friday, and I plan on taking it easy all weekend—especially when it comes to cooking. Simple salad and a grilled main...done! Or, I could go for this slow cooker  Pulled Pork.

by Sarah, my daughter-in-law. She uses a crock pot for her bone-in pork shoulder! You won't believe how tender and flavorful it turns out!



Sometimes the best things in life are the simplest, and you can’t get much simpler than this easy coleslaw. Pile this crunchy goodness on top of sandwiches for a tangy crunch or serve alongside your favorite summer dishes and you’ll be glad you didn’t spring for the soggy, bland mayo-and-water-laden “option” from the deli counter. 

Cole Slaw by JJ

1 head green cabbage, shredded
2 carrots grated
1 medium red onion thinly sliced
1 bunch (5-6 green onions) white and green parts chopped
1 fresh yellow or red chile pepper chopped
1 1/2 c. Best Foods or Hellmans mayonaise
1/4 c. Dijon mustard
1 fresh lemon juiced
1 T. red wine vinegar
1/2 tsp sugar
1/2 tsp celery seed
1 tsp. hot sauce
Kosher salt and freshly ground pepper

Combine the cabbage, carrots, red onion, green onion and chile in a large bowl.

Using rubber gloves to handle the chile.



In a second bowl, stir together the mayonnaise, mustard, vinegar, lemon juice, and sugar. Pour over the cabbage mixture and gently mix. Add the seasonings, celery seed, hot sauce, salt and pepper. Chill for two hours and serve! Yummy!


My guest's loved my coleslaw, and I have to admit, it is the best I have ever tasted...brag, brag... No matter how you use it, alone or on a slider, delish! 

My delicious coleslaw was a huge hit at my July 4th Slider Bar Party!

  2. Your timing was perfect! I whipped this up for friends, they cannot stop talking about it. I served with grilled salmon. Allie
