Zombie Caramel Corn and more!




Just about everyone loves 



Caramel Corn and cheesy corn, truffle corn, margarita corn.... I feel like I am always talking about weird popcorn concoctions, but I do like to test many kinds of flavored corn.  I say, no this isn't that great, and then I eat so much that I am sick. And that process will just sort of repeat itself over and over again. But pretty much everyone agrees on caramel corn and it is easy to make!



Caramel Corn

7 quarts popped corn
2 c. brown sugar
1 c. butter
1/2 c. light corn syrup
1 tsp. salt
1 tsp. vanilla
1/2 tsp baking soda

Cook the brown sugar, butter, corn syrup ad salt for 5 minutes

Add vanilla and soda

Coat the corn with the mixture.



Bake at 250 degrees F for 1 hour, stirring every 15 minutes.

The sugar burns easily, keep an eye on it!

Wee Bear and I are off on a trip with 130 of our very best friends this week!! We are flying into Prague, staying a few days, then driving to Nuremburg, where we will board a chartered river cruise with friends to Budapest!! We are really excited, our first time on a  river cruise! 

I will be posting a couple Halloween posts in the next week, then take a break until I get back from our holiday!



Just need my caramel corn!
