Beef Piroshki appetizers





Today is December 2, and I am planning to do Holiday appropriate recipe each week until December 31!! Yay! I will also give you other options and links to think about for your Holiday planning.


I had no idea of what a "piroshki" was until I was in cooking school with my German teacher Eva Kenly, she opened my eyes to so many delicious recipes, that I would have never ventured to try. Each day I spent with her, was a culinary adventure that I will never forget. Wonderful memories attached to each recipe.  "Piroshki's" are one of my favorite go to recipes, so yummy!! If you want to impress, this is a choice you will not regret! Perfect for the office party!

If you want to change up the meat, feel free, I have used pork sausage and ground chicken, all good choices!

Beef Piroshki


Pastry


1 c butter
1 c sour cream
2 1/2 c flour
1 tsp. salt


Blend butter and sour cream. Blend in flour and salt. Wrap in plastic wrap and chill at least two hours.





Meat Filling


3 T butter
2 onions, finely chopped
1 lb. ground beef, or ground chicken or sausage
2 T sour cream
1/4 c. cooked rice
1 T dill finely chopped
1/4 c. parsley, finely chopped
1 tsp. salt
1/2 tsp pepper
2 eggs, hard boiled and chopped

In a skillet, saute onion in the butter until golden. Add ground beef and cook until meat is no longer pink. Remove from heat and drain off any excess fat. Add all the other ingredients and cool.

Pre heat oven to 400F degrees

Roll ou dough between plastic wrap to 1/8inch thickness. Cut into 2 inch rounds. Place filling in the middle of each and pinch all around to seal.

Beat 1 egg with 1 tsp. water. Paint pastries with egg wash and place on a greased, parchment paper or silpat lined baking sheet, bake until golden brown, about 15-20 minutes.

  Sausage Stuffing Bites are delightful! This little appetizer combines all those flavors we love, has that little crispy top and it's all in one little bite! YUM!! This is a great appetizer for Winter parties and for a starter for Christmas dinner..... here's why? It has savory bread to soak up any spirits we may drink during the day and it has a delightful crispy little top. Quick and delicious, your friends and relatives will ask you to bring this time after time!




My family loves Caprese salad, so when I made these little Caprese Boats they were thrilled. A light figure friendly appetizer, these will be a big hit at any Christmas dinner and the colors are perfect!!



 

 Tink's Stuffed Mushrooms! These little gems were created by "Tink". They are easy to prep and taste so good straight out of the oven! We ask her to make these often for family gatherings and they disappear in a matter of minutes! She changes the ingredients often, however, they always have sausage and some cayenne for pep!




Cheese Straws This is perfect for a quick delicious appetizer! I have made it more times than I have fingers on my hands to count.  They come out wonderful EVERY SINGLE time



Chicken Parmesan Meatballs I can tell you, this is Wee Bear approved.....He didn't think much about it when I told him I was making meatballs with ground chicken, for dinner. It was love at first bite, he went crazy, had them for lunch each day, until the last little meatball vanished into his open mouth! The color's perfect for the holiday season!




Dungeness Crab Cocktails with mustard sauce You can never go wrong with crab! It's beautiful, totally light and incredibly delicious. There is no cooking involved in this mustard sauce recipe! It is so quick and easy!  Just use freshest ingredient's available!


I hope I have given you a start with your appetizers for the holiday season. Whether it's a office party, a gathering of friends, or your New Year's celebration, have fun and enjoy!
