JJ's Tomato Basil Crab Bisque
3 T. unsalted butter
1 lb. Fresh Crab meat
2 Tomatoes, seeded and chopped (about 3/4 cup)
1/2 cup chopped fresh basil, reserve part for garnish
5 garlic cloves, minced
12 ounces V-8 spicy
12 ounces V-8 original
1/2 cup all purpose flour
1 cup Half and Half
2 tsp. Old Bay Seasoning
2 dashes hot pepper sauce
1 1/2 cup chicken stock
2 T. fresh lemon juice
Melt butter in heavy large pot over medium high heat. Add 3/4 pf the crab meat, tomato, 1/3 cup chopped fresh basil, and garlic. Saute 2 minutes. Whisk in flour; stir for 2 minutes. add V-8 slowly, stir in Old Bay Seasoning, half and half, hot pepper sauce and the chicken stock. Reduce heat to low and simmer until the soup slightly thickens, about 10 minutes. Cool soup...
Puree the soup in batches in a blender until smooth. (If you want the crab lumps, save part of the soup out of the blender, add later) Return soup to pot. Stir in lemon juice; bring to a simmer and season with salt and pepper. Can be made a day ahead. Chill uncovered until cold, then cover and keep refrigerated.
To serve, bring to a simmer and divide among 8 bowls. Sprinkle with remaining crab or a crab piece and remaining chopped basil.
