Grilled Breakfast Burrito



 Cinco de Mayo is almost here, start with a celebratory Breakfast Burrito! Yum! The kids will love as much as the adults! May 5, 2016 is just around the corner!


I love breakfast burrito's! I order one quite often when we are out for brunch or breakfast. I especially like them full of red peppers and potatoes. I think you will agree this is a easy recipe only requiring a skillet and a grill, not much clean up here!


Grilled Breakfast Burrito

1/4 c. vegetable oil
4 red potatoes
1 yellow onion
1/2- 1 whole red pepper
1/4 c. unsalted butter
8 eggs beaten
1 lb of your favorite sausage, breakfast sage, chorizo, sage or Italianor you can sub ham, bacon or meatless
1 tsp. salt
1/2 tsp freshly ground  pepper
1 c. Monterey jack cheese (can use low fat)
1 c. sharp cheddar cheese (can use low fat)
10 large flour tortilla's, flavored or not
nonstick cooking spray

In a large skillet over a medium temperature, heat the oil and fry the potatoes until they are almost cooked through. Add the onions and red peppers, and continue to cook until all the vegetables are tender. Drain oil and set aside on a plate with paper towels (to further soak in the oil). Fry the sausage, drain and add to the vegetables to further drain.

In the same skillet, melt the butter over medium heat. Scramble the eggs, and add the potatoes, vegetables and sausage. sseason to taste with salt and pepper.

Lay out the tortillas and layer first with the cheeses, then the egg mixture. Roll into a burrito. Spray a hot grill with cooking spray and grill for about 8-10 minutes or until lightly browned. I have a built in grill and can do 6 at a time, but you can use a electric grill such as George Foreman grill or even the skillet you have been using.

Serve hot with Pico de Gallo, sour cream, avocado and salsa!

Option for meatless or addtionally- black bean

I am halfway through my "ZEN" week at my favorite yoga, hiking and cleanse spa, Pearl Laguna. I am really in the zone with hiking and getting my yoga back into my life. Tonight we did Tai Chi on the beach, meditation and a walk while watching sun set...beautiful....
