Lemon and Rosemary Golden Chicken



Sticking with my lemon theme, this week I am offering a delicious light and figure friendly dish, that you can make in 15 minutes! This "non boring" chicken dish is the first in a series of three chicken dishes I will be posting in the next few weeks! Stay tuned.....all three chicken dishes can be made in 15 minutes or less and are NOT boring! 



This dish is perfect for a week day meal and is oh so yummy!

Lemon and Rosemary Golden chicken

2 boneless chicken breast halves or one whole boneless chicken breast
1 Tablespoon + 2 tsp.  olive oil 
2 chopped garlic cloves
2 tsp. chopped fresh rosemary
Juice on one lemon

Grill or saute the chicken breasts until browned and cooked through in the tablespoon of olive oil. In same skillet if sauteed, combine 2 teaspoons olive oil with the garlic, the rosemary  and the lemon juice. Simmer for 2-3 minutes. Drizzle over chicken. Serve with rice and crusty french bread to soak up the juices. YUM!






Wee Bear and I have returned to the Pacific Northwest for the Summer. We drove from our Scottsdale home this time. Enjoying a few National Parks along the way. Below are a few picture's we took along the way!

Bryce National Park, last picture is at Bambara restaurant in Salt Lake City. We spent one night at Hotel Monaco with our pups. While walking our pups after dinner we happened upon the Mormon Tabernacle Choir practice!! What a HUGE treat! WOW!
