This salad has granny smith apples, toasted pecans, dried cranberries, pomegranite seeds, oranges and feta. When you flavor it with the homemade sweet and sour poppyseed dressing, it takes it over the top into what’s now my favorite salad incorporating fruit. If you aren’t a fan of poppy seeds, simply omit it in the dressing (it will still be fabulous!).
This SPINACH based salad will boost the thyroid glands' output of metabolism-reviving hormones!
Serve
this fresh salad to your guests as a meal for lunch or side salad for
dinner. Full of super foods, this spinach salad is screaming health! If serving for a main, add some chicken or turkey!
Spinach Salad with Super Foods
Ingredients:
5 ounces fresh spinach (half a 10 ounce bag)
3/4 cup chopped celery
3/4 cup dried cranberries
1 can (15 ounces) mandarin oranges - or fresh Cuties or Halos
or 1 cup of pomegranate seeds
1 large Granny Smith Apple
1 teaspoon lemon juice
1/3 cup pecans
Optional: Feta cheese

1/8 teaspoon each: paprika, onion powder
1 tablespoon poppy seeds
Throw it all together!
4 tablespoons olive oil or vegetable oil
2 tablespoons apple cider vinegar
2 tablespoons white wine vinegar
2-4 teaspoons white sugar - Or use Honey, Agave or Stevia to taste
1/8 teaspoon each: paprika, onion powder
