Ginger Stir Fry Chicken



The third recipe in my series of 15 minute chicken dishes. This is my favorite! Light, figure friendly and delicious!





Ginger Stir Fry Chicken

2 boneless chicken breast halves or one whole breast diced into 1 inch pieces
1 T. vegetable oil
1 T. chopped fresh garlic
2 tsp. chopped fresh ginger
1 T. chopped green onion (white part only)
1 1/2 T. low sodium soy sauce
1 tsp. sesame oil
1/2 cup shredded Bok Choy


Saute the chicken in the vegetable oil until golden; remove to warm plate. In same pan, saute the ginger, garlic and chopped green onions for one minute. Add the soy sauce, sesame oil and bok choy. Cook until the bok choy is bright green and slightly softened about 2 minutes.Stir in the warm chicken and serve! I served with rice!


We spent a long week end with two of our six families of kids and grand kids at Seaside, Oregon. Had some real fun and I prepared a Sea themed birthday party for all four grand children. They loved it, we loved it! Here is a pic in front of the town sign!
