Mushroom Lover's Chicken
This is the second in a series of three, non boring, fifteen minute or less chicken dishes. This one is Wee Bear's favorite of the three. Don't tell him, it only has a 1/4 cup of cream or half and half in the sauce!
Mushrooms pair with everything, and my easy skillet dish Mushroom Lover's Chicken is smothered with a flavorful mushroom sauce that is company-fancy but easy and quick enough for weeknight dinners.
Mushroom Lover's Chicken
2 boneless chicken breast halves or one whole chicken breast-filet and pound lightly to about 1/2 inch thickness
2 T vegetable oil
1 c. sliced mushrooms
1 tsp. Fresh Thyme leaves (substitute dry)
3/4 c. white wine
1 tsp. Balsamic vinegar
1/4 c. heavy cream (substitute half and half), do not use milk, it will curdle
In a skillet, saute the boneless chicken in vegetable oil until golden brown and cooked through; remove to plate. In the same skillet saute the mushrooms until soft and lightly browned, about 10 minutes. Add thyme leaves, wine and vinegar. When the wine and balsamic has reduced to half, add the cream. Drizzle sauce over the chicken and enjoy!
Today my Mother turned 96! Together with my son and daughter-in-law we organized a Roaring 20's party! It was spectacular! Mom loved it! My Mother grew up next door to Al Capone in Chicago, they were paid hush money each month by Al's bagman. He came right through their front door and slapped the $$ on their kitchen table. Lot's of history in my big beautiful family! This family has a history of fun times!! Here are a few pictures!
