One more recipe to finish up those Thanksgiving leftovers. This is so yummy! If you do not have any stuffing left over, you can just make some "Stove Top"....yikes, did I say that!
Turkey Soup with Stuffing Dumplings

Carcass from one 12-14 lb turkey
2 large onions, one quartered and one chopped
4 carrots, peeled, 2 chopped and 2 sliced
4 stalks celery, 2 chopped and 2 sliced
6 garlic cloves chopped
1 bay leaf
10 whole peppercorns
2 Tablespoons olive oil
2 large eggs
6 Tablespoons all purpose flour
1/2 tsp salt
pepper to taste
2 cups leftover stuffing
2 sprigs thyme
2 cups left over turkey meat
1 cup any other left over vegetable, I used frozen corn
Put the turkey carcass, quartered onions, chopped carrots, 1/2 the chopped celery, 1/2 the chopped garlic cloves, bay leaf and the peppercorns in a large pot. Add enough water or chicken stock to just cover the carcass. Bring the water to a boil and then reduce the heat to maintain a gentle simmer, cook for about 1 hour. Remove from heat and strain the solids from the broth. Pour the liwuid through a fine mesh strainer and reserve, you should about 10-12 cups of broth. Any extra put into a freezer container for future use.
In a small bowl, whisk the eggs, flour, 1/2 tsp salt and some pepper together until smooth. Add the stuffing and mix until well combined.
Wipe the stockpot out with a clean paper towel. Heat the olive oil in the pot over medium heat. Add the chopped onion and garlic, cook until soft and translucent, about 6 minutes. Add the sliced carrots and celery, thyme sprigs and reserved broth and bring to a simmer; cook until vegetables are soft, about 10 minutes.
Roll tablespoons full of the dumpling mixture into balls and drop into the simmering soup; cook until dumplings float, 3-4 minutes. Gently stir in the turkey meat, corn(any other vegetables and season to taste. Simmer until heated through. Serve immediately!
*Dumplings- stuffing can vary in moisture, if yours is too soft add a little flour to help firm it up.
We had some friends/neighbors over for Sunday Seahawks game and late lunch, early dinner. This was perfect! Very casual!
