Caramel Apple Streusel Pie

Baking a homemade apple pie will make you feel like a kitchen champion, in that really awesome ’50s housewife or grandma way. However baking this Caramel Apple Streusel Pie will make you feel like a superhero. This pie is outrageously good and puts all store-bought apple pies to shame. Yes, making homemade pie dough and peeling and slicing a bunch of apples can be laborious but I promise you it is SO worth it. If you are looking to wow your friends and family this Holiday Season, this is the pie! The bonus your entire kitchen will smell like heaven on earth.




Caramel Apple Streusel Pie 

30-40 minutes prep time
Bake 45-55 minutes


Crust
2 1/2 c. All Purpose flour
1/2 tsp. Salt
1 c. cold unsalted butter
1/2 c. ice water

Filling
3/4 c. sugar
1/4 c. All purpose flour
1 tsp. ground cinnamon
2 lbs. apples, yields about 1 1/2 lbs. peeled, cored and sliced apples, about 6 cups (I used granny smith, as I wanted it a bit tart)
1/2 c. caramel apple dip, caramel sauce or melted caramels, divided
2 T. milk or cream

Streusel
3/4 c. All purpose flour
1/4 c. oatmeal
1/2 c. brown sugar
1/2 tsp. cinnamon
1/2 c. cold unsalted butter



Pre heat oven to 375 F

Crust- Combine the flour and salt in food processor, add cut up butter and pulse until it is crumbly. Add enough ice water to bring the dough together.

Divide the dough in half, shape each half into a disk and roll out between two pieces of plastic wrap, wrap well and refrigerate for one hour.

Filling-Combine the sugar, flour and cinnamon. Stir in the apples.

Streusel- Combine the flour, oatmeal, cinnamon and sugar. Work in the butter until crumbly.

To assemble pie-  Roll on piece of the dough into a 12 inch round, and lay it into the 9" pie pan.




Spoon in the filling and sprinkle with the streusel topping



Roll the second piece of dough into a circle slightly larger than the top of your pie pan. At this point you can make cut outs, like I did and place them randomly over the top of the streusel, or you could make a lattice top by cutting strips 1 1/2 inches wide and weaving. Seal and crimp the edges.

Bake for 45-55 minutes, until golden brown. Test with a skewer, it should go in easily, you will be able to tell if the apples are soft or still crisp. I put it in between the dough top, as to not ruin the pretty leaves. 

Remove from oven, and allow to cool for 15 minutes.

Drizzle the pie with the remaining caramel, warming the caramel slightly if necessary to make it "drizziable"!

Cool the pie for at least 2 hours before serving. 



In the next couple weeks I will be giving my children what they have asked for...my twice baked potato recipe and Prime Rib. I have already given Wee Bear this dinner and he couldn't stop saying "WOW"! I bought my Prime rib at Costco, it was "Prime", and because there was only two of eating I cut about a third off, leaving 2/3rds of the roast for next time. I have several other recipes I want to get to you, I'm hoping time allows!
