Spicy Cashew's

I made 2 lbs of these delicious Rosemary spicy cashews for Christmas and for a 1 week holiday trip in the snowy mountains with family. You will find these have just the right amount of rosemary, sweetness and a little kick!

Instant Pot Turkey Breast
I made this turkey breast a few days after Thanksgiving, because, we didn't cook on Thanksgiving! WHAT! Yep! I turned the reins over to my children a few years ago and they are doing a great job with planning and executing a perfect holiday! However......no left over turkey! So, I made a turkey breast in my Instant Pot. Juicy and delicious!
I served with my JJ's favorite Instant Pot Cranberry Sauce and mashed potatoes. The mashed potatoes link will give you timing for potatoes in the IP, you can choose to peel the russets or not peel the red potatoes. Rice the potatoes or smash with a potato masher; add cream, butter, salt and pepper.

Instant Pot Baked Potatoes
I love baked potatoes with just about anything, but, hate waiting a hour or more for them to cook in the oven. I used to cook them in the microwave and finish them in the oven, however I think the IP way produces a fluffier potato. I have been making potatoes in the pressure cooker for 50 plus years, usually mashing them or lately I like to make "Smash Hot Potatoes", "Cheddar Hot Smash Potatoes" or "Rosemary Smash Hot Potatoes" . Instant Pot Hamburger Stroganoff
I have fond memories of a delicious "Hamburger Stroganoff" that was served at school lunch time when I was growing up. My neighbor, Dee Merlini, mother to two of my best friends was head cook at the school and gave me the recipe when I got older. I used to cook this for a quick dinner when I was working in my twenties.....delish! Then.....somehow that recipe went by the wayside and I started using sliced steak in my stroganoff. The other day, I was thinking and remembered that delicious stroganoff of long ago.....I decided to revamp the recipe for the "Instant Pot" and for my grandchildren's dinner! Delish!

I made this delicious Beef Stroganoff in the IP the other night, and guess what ......Instead of two pots (one for the beef/sauce and one for the noodles) I used one pot. I would say timing for actual cooking is about the same, but, clean up much faster!

Farmer's Breakfast Casserole
I made this Farmer's Breakfast Casserole the other morning for two of our children and their families, 10 people total! We met our family at a home we rented on the Oregon coast for a long week end. This Farmer's breakfast was so easy and scrumptious! It is perfect for the holiday brunch, a family get together or a brunch for the soccer team! You can do all the preparation the night before and pop it in the oven in the morning or just make it all in the morning, either way, it is perfectly delicious!

I turned the page and "POW" it's Fall! It is time for Pumpkin Spice everything! It is time for Pumpkin Spice lattes, Pumpkin Cinnamon Streusel Muffins, Pumpkin Pancakes, Pumpkin Ravioli's and Pumpkin Bread....which is what prompted me to make this delicious Pumpkin Spice Oatmeal. One of my favorite things about the cuisine in the Pacific Northwest is Manilla clams.....everyone who knows me, knows I love Manilla clams! Did you know you don’t have to go to Manila to get manila clams? We have them right here!!
Shellfish are a very healthy choice. Clams are low in fat, high in protein and omega-3 fatty acids. They are also a rich source of potassium, and a very good source of Protein, and if you are watching the waistline, pretty low in calories. Mussels are much the same and very high in iron, but, have a different flavor than Manilla clams.

I thought my boiling them for 2 hours was awesome, however, I often wondered if I was boiling the nutrition right out of them! Instant Pot Strawberry Rhubarb Compote
Today I am giving you a easy recipe for homemade strawberry rhubarb sauce or compote made with strawberries, rhubarb, lemon juice, sugar and water. I had some strawberries and rhubarb leftover from some delicious Strawberry Rhubarb pies in a mason jar I recently made, and decided that the best way to use them was to make a quick and delicious Instant Pot strawberry rhubarb sauce that could be used as a topping for pancakes, crepes, or waffles. Fresh fruit sauces or compotes are so easy to make in the Instant Pot, and as I’ve probably mentioned before, since you make it yourself you can control how much sugar is added to the sauce – and trust me, you need a lot less than is usually included in the store bought fruit sauces or jams. You can also substitute the sugar with honey or other natural sweeteners. This strawberry rhubarb sauce is also a great topping for desserts like ice cream, custards, pannacotta, and even cakes. The sauce can be served warm or cold.

Farm Themed Tuffet
I started making these adorable tuffet's about 9 years ago, just before my first grandchild turned "1"! Eleven grandchildren later, I have made at least 13 tuffet's (honestly, I have lost count)! Instant Pot Chorizo Clams
Everyone that know me, knows I love clams! Growing up in the Pacific Northwest, I had the pleasure of eating clams on a regular basis. I considered myself very lucky, and still do! My Aunt Gail would have a annual clam fest every Summer. They would actually go out and dig the clams early in the morning on event day. It was amazing! Instant Pot Water Test
Have you purchased and used a "Instant Pot" yet? Have you even heard of the "IP"? Well, let me enlighten you, if you are not part of this craze!
If you have been keeping up with Wee Bear and I, you know we purchased a motorhome, a 34 foot beauty we named "Aria"! We are planning to explore the United States with our son and family, and anyone else that is brave enough to come along! More on that later......and possibly a new blog in the makings....I have purchased and created the domain name "whereRVgoingtoday"! Stay tuned!
Okay, on to the "IP" ......I was outfitting Aria with her dishes, pots, pans, etc. and read about the "Instant Pot". I was interested, and read more. Basically, it is a programmable pressure cooker, rice cooker, slow cooker, yogurt maker, egg cooker, warmer, saute and steamer all in one! This is perfect, as any RV owner knows, space is limited in the RV, no matter how big you are! I read reviews and ......well, I dove in! Reading about IP users making their favorite recipes and 5000 other delicious things they have been cooking in their Instant Pot. I have joined several IP groups on Facebook and read about their experiences. This weekend I made my first few dishes, New York Cheesecake with strawberry compote, Crispy Carnita's, Monkey Bread, Spanish rice.....and a few more. All this, after doing the "Water Test".

S'mores pudding shots!
The S'more is known as a Summertime treat. Some of us, learned how to cook our first S'more over a campfire. No one seems to know where the S'more originated, but, I like to think it originated with my Dad, on a camping trip under a starry sky. Other's like to think it originated with the Girl Scouts of America when a recipe was published in a 1927 version of Tramping and Trailing with the Girl Scouts. No one is real sure of who or where it originated, but, everyone is sure it is a delicious treat that aligns with great memories!

This ideal secret sauce for burgers is a carefully balanced, creamy blend with just enough acid, spice, smokiness, and sweetness. This was developed especially for a burger, but it works just as well as for fries, onion rings, sandwiches, deviled eggs (instead of mayo), and more. I think this concoction is just right, but it's easy to adjust the proportions according to personal taste to create your own house secret sauce.
