Coriander Lime Wings
Here is the 2nd recipe in my series on healthy chicken wings. This one reminds me of my time in Jamaica, the lime brings back good memories from our "Pig's, Limes and Pepper's" business! The Caribbean flavor is a take on "Jerk" seasoning, but mild.
Healthy wings for football!
Coriander Lime Wings
2nd in the series "Healthier Wings"
2 lbs. chicken wings, drumsticks
1 T fresh lime juice
1 T each coriander, ginger, cumin and garlic powder
Salt and pepper to taste
Trim visible fat off the chicken, rinse and place in a large pot, fill with cold water.
Bring to a boil and boil for 10 minutes.
While chicken is boiling, place the remainder of the ingredients in a large zip lock and shake to mix.
Set the broiler to high and the rack about 6 inches from element.
Add the cooked chicken to the bag and shake well until well coated.
Place the chicken on a lined baking sheet and broil for 6 minutes each side or until it is crispy.
*If you like a dip for your wings, I enjoy the Bolthouse dressings and they are low in calories and fat. I find mine in the refrigerated dressing section at Safeway.
