Instant Pot Chorizo Clams



Everyone that know me, knows I love clams! Growing up in the Pacific Northwest, I had the pleasure of eating clams on a regular basis. I considered myself very lucky, and still do! My Aunt Gail would have a annual clam fest every Summer. They would actually go out and dig the clams early in the morning on event day. It was amazing! I have a few recipes for clams, this one is Wee Bear's favorite, that I adjusted for the Instant Pot!


Instant Pot Chorizo Clams

1/2 lb chorizo sausage
1 medium yellow onion diced
4 cloves garlic minced
1 c. clam juice
1 c. dry white wine
2 1/2 pounds little neck clams (I used Manilla)
3 T. unsalted butter
4 sprigs parsley
4-5 wedges of lemon

Put your Instant Pot on saute mode and saute the sausage and onion for 5 minutes or until onion is soft. 





Add the garlic, clam juice, white wine and bring to a boil. Add the clams to the broth, put the lid on the IP and turn to seal, and close the valve.


Put the IP to Pressure cook high for 2 minutes. When finished, do a Quick Release



Put the butter parsley and lemon wedges in and serve!


 *Discard unopened clams.
