Instant Pot Strawberry Compote
By popular demand! I am posting the strawberry compote request for my delicious New York Cheesecake!
I am having so much fun with my Instant pot! Today, I am cooking a strawberry rhubarb compote, some stuffed peaches and possibly some ......baby back ribs for dinner!! Everything is so fast!
Instant Pot Strawberry Compote
1 lb. fresh strawberries
1/8 c. granulated sugar
2 tsp orange liqueur (can substitute a squeeze or two of fresh orange juice)
Clean and cut the strawberries in half and add to the IP. Sprinkle with the sugar and let it sit for 20 minutes.
Lock on the lid and close the pressure valve. Cook on high pressure for 1 minute.
When the cooking is finished, allow a 15 minute NP (Natural Release). Turn the valve to release the remaining pressure.
Stir in the orange liqueur. I pour into a measuring cup and then pour into my wide mouth canning jars. Allow to cool to room temperature, then refrigerate.
This delicious compote can be used over my delicious New York Cheesecake, pancakes, waffles, IP yogurt, ice cream or even slathered on toast!
*Optional tip- when the strawberries cook, they turn a bit grey....not as perky red. I add red food coloring. Just add enough to bring back the color!
