I turned the page and "POW" it's Fall! It is time for Pumpkin Spice everything! It is time for Pumpkin Spice lattes, Pumpkin Cinnamon Streusel Muffins, Pumpkin Pancakes, Pumpkin Ravioli's and Pumpkin Bread....which is what prompted me to make this delicious Pumpkin Spice Oatmeal. I have a can of pumpkin puree and a carton of almond milk and a grandson who I am constantly trying out a new recipe on!
I love oatmeal and have some form of oatmeal every morning. When I am really in a rush I just have a bowl of my homemade Granola sweetened with pure maple syrup, it is yummy. I used the same pure Maple Syrup to sweeten this Oatmeal and made it quick in my Instant Pot! Just 10 minutes!
Pumpkin Spice Oatmeal
2 c. steel cut oatmeal
2 c. almond milk (any milk will work)
1 1/3 c. water
1 c. pumpkin puree
1/3 c. maple syrup
1/4 tsp. salt
2 tsp. Pumpkin Pie Spice ( I make my own, recipe below)
Combine all ingredients in the Instant Pot and stir to combine well.
Set the Instant Pot to "porridge" for 10 minutes.
Move the valve to sealing position.
Do a "Natural Release" for 10 minutes and then a "Quick Release" by turning the valve to venting position. See explanation on this link.

Pumpkin Pie Spice
1/4 c. Cinnamon
4 tsp. ground nutmeg
4 tsp. ground ginger
1 Tblsp. Allspice
Mix all ingredients and store in a airtight container. If in a warm climate, you can freeze.
