Instant Pot Beef Stroganoff

Glamping and the Instant Pot! I love this IP!

I made this delicious Beef Stroganoff in the IP the other night, and guess what ......Instead of two pots (one for the beef/sauce and one for the noodles) I used one pot. I would say timing for actual cooking is about the same, but, clean up much faster!

I serve this with a green salad or a side vegetable for a delicious, satisfying meal for 4 adults with healthy appetites.

Instant Pot Beef Stroganoff
  Ingredients
  • 1 1/2 lbs, top sirloin steak or filet and cut into thin strips (or left over steak)
  • 2 T All-purpose flour
  • 3 T. olive oil
  • 3 T. unsalted butter
  • 3 shallots, thinly sliced
  • 8 ounces any kind of fresh mushrooms, sliced
  • 2 (10 3/4-ounce) can beef broth
  • 1 (10 3/4-ounce) can cream of mushroom soup
  • Salt and black pepper
  • 1 cup sour cream
  • noodles of your choice, I used 1/2 a box of fettuccine that I snapped in half

Turn the instant pot to saute' and quickly brown steak strips on both sides in the olive oil and butter. Do not crowd the IP, as you want them to brown.

Remove the steak from the IP. Add the shallots slices and mushrooms to the pan drippings. Saute for a few minutes, until the onion is tender.

Sprinkle with 2 tablespoons flour, cook the flour for a minute or two. Put the steak back into the IP with the onion and mushrooms. Add the mushroom soup and beef broth. Break the fettuccine in half or your choice of noodle and mix in real well, making sure all the noodles are covered in sauce.

Put the lid on the IP and close the valve. Put the Instant pot to 'Manuel High' and time for 10 minutes and do a "Natural Release" for 10 minutes when the timer goes off. Release the rest of the pressure, turning the valve to release.

Stir up the stroganoff and adjust seasoning to taste, adding salt and pepper and stir in the sour cream. I garnished with parsley, however snipped chives sprinkled over the top would be a tasty addition!

I served with noodles, but, have served on mashed potatoes too. This is also good over flaky buttered biscuits.

    1. Yes, you can use chicken or pork. Just change to a chicken stock instead of the beef broth. It will be delicious! Thanks for commenting! Cheers! JJ
