Brussels Sprouts, Chestnuts and Blue Cheese


If you are looking for a delicious new side, I did some experimenting for you and came up with a winner! Very fast in the instant pot! Just a bit longer on the stove top, both instructions are below!


 Instant Pot
 Brussels Sprouts, chestnuts and Blue Cheese

2 T olive oil
2 large shallots sliced
1 lb. brussels sprouts, trimmed and halved lengthwise
1 7.4 ounce jar steamed chestnuts
1 cup chicken or vegetable stock broth
1/3 c. heavy cream
3 T. snipped chives
1/2 c. crumbled blue cheese
crumbled bacon optional garnish
salt and pepper 



Heat olive in the instant pot on saute or in a large non stick skillet over medium heat.  Add shallots and saute for one minute. Add brussels sprouts and chestnuts.  Sprinkle with salt and pepper and saute one more minute. Add the chicken broth and put the instant pot lid on in locked position. Set low pressure for 2 minutes and close the valve. (note if you do not have the low pressure, use high pressure for 1 minutes) 


This goes very quickly, the pressure comes up in about 4-5 minutes because the liquid is hot. When cooking is done do a quick release, remove lid and turn to saute. Cook until liquid is almost all evaporated. Add the cream cook and stir until all the brussels sprouts are coated with cream, add the chives and crumbled blue cheese, turn off the saute button, season with salt and pepper and transfer to serving bowl. Garnish with the crumbled bacon.





Stove Top Method
Heat olive oil in a large non stick skillet over medium heat. Add shallots and saute for one minute. Add brussels sprouts and chestnuts. Sprinkle with salt and pepper and saute one more minute. 

Add the chicken broth and simmer covered until brussels sprouts are tender, about 5 minutes. Uncover and boil until all liquid evaporates, about 4 minutes. Add cream, cook and stir until all brussel sprouts are coated with cream. Turn off burner and stir in chives, season with salt and pepper. Transfer to serving dish and garnish with blue cheese.
