Instant Pot Asian Style Flankin Short Ribs




Although short ribs used to be seen as a less desirable cut of beef, they've risen in popularity, causing prices to also increase for this cut that used to be fairly inexpensive. So if you're now spending more for short ribs, it makes sense to get to know the two popular ways that they're cut, flanken and English style. Once you know the differences in appearance and how they should be cooked, you can buy the right cut for your recipe! 





 If you buy English-style short ribs, which are cut along the bone, you must butterfly the meat into a thin, long strip. If the ribs you buy are flanken-style, in which a band saw is used to cut across the ribs, creating half-inch slices of beef dotted with three little bones, rinse them under cold water before seasoning to remove any bone fragments. It’s a good idea to let the ribs marinate for at least two hours to allow the seasoning to penetrate; marinating overnight is even better.

Instant Pot Asian Style Flankin Short Ribs 



1 1/2 lb. flankin style short ribs 3 T red or yellow Miso
3 T mayo
6 T unseasoned rice vinegar, divided
Kosher salt
4 tsp. vegetable oil
1/2 c. brown sugar
1 c. low sodium soy sauce
1/2 cup mirin rice wine
2 garlic cloves crushed
5-6 red radishes, sliced
3-4 green onions


Stir miso and mayo together with 3 tablespoons of the rice vinegar. Place the ribs on a rimmed baking sheet and spread the mixture over the ribs, turn and coat the other side. Cover with plastic wrap. Put into the refrigerator and let them marinate for at least two hours or over night.

Put the instant pot to saute, put in 3 tsp vegetable oil and saute/brown the ribs on both sides. Remove the ribs to a plate.




Pour the rice wine into the instant pot, deglaze and add the soy and garlic and brown sugar. Return the ribs to the IP and put the lid on. Turn the valve to closed. Press the high pressure button and put the timer to 6 minutes, allow a 15 minute natural release.

While the Instant pot is cooking, marinate the sliced radishes in the 3 tablespoons of rice vinegar. About 10 minutes. Chop the green onions.

Garnish with green onions and serve with rice and marinated radishes and sauce on the side.
