World Peace Cookies
The World Peace Cookie lives up to its name: If everyone had one, peace would reign o’er the planet. I’m convinced of this.
The World Peace cookie has a long history, starting sometime before the turn of the millennium, when Pierre Herme', who was named the "Best Pastry Chef in the World, created it for Korova, a then new, now gone restaurant in Paris.
I made these tasty morsels for a family ski/snowmobile trip to McCall, Idaho. Huge hit!
World Peace Cookies

1 1/4 cup all purpose flour
1/3 cup unsweetened cocoa powder
1/2 tsp. baking soda
11 tablespoons unsalted butter, room temperature (1 cube plus 3 tablespoons unsalted butter)
2/3 cup brown sugar
1/4 cup granulated sugar
1 tsp. vanilla extract
1/4 tsp. sea salt
5 ounces extra bittersweet chocolate chopped (no pieces bigger than 1/3 inch)
Using a electric mixer mix the butter and sugars together until smooth, but not fluffy. Add the vanilla and sea salt and beat until fluffy, about two minutes.
Sift the flour, cocoa powder and soda together.
Add the flour mixture to the butter mixture and mix until just combined(may be crumbly)
Add chopped chocolate and mix just to combine. You may need to knead a little in the bowl to form a ball.
Divide dough in half and form into two 1 1/2 inch logs on two pieces of plastic wrap. Wrap up in plastic wrap and chill until firm about 3 hours.
I was making for a trip to Idaho, so I made ahead, placed in a thermal bag with ice packs. You can make 3-4 days ahead.
Pre heat oven to 325 F degrees. Line baking sheet with Silpat or parchment paper.
Using a sharp knife, cut logs crosswise into 1/2 inch-thick rounds. The rounds might crack as you’re cutting them — don’t be concerned, just squeeze the bits back onto each cookie. Arrange the rounds on the baking sheets, leaving about 2 inches between them. If you’ve cut both logs, keep one baking sheet in the refrigerator while you bake the other. Bake 1 sheet at a time until cookies appear dry, 12 minutes. Cookies will NOT be firm or golden on edges, they will not look done. That is the way they should look. Transfer to wire rack. Can be made 1 day ahead, keep in air tight container. However, I love them warm~
Our annual family ski/snowmobile trip this year to McCall, Idaho. We had such a great time with family. Skiing, snowmobiling, shopping, dinners in and out, hot tub and a natural hot springs in the mountains and much more! We will be coming back to McCall!
