Instant Pot Salmon with dill
The warm weather is here in the southwest! I like to lighten my meals up with fish, clams and chicken on warm days. With Mother's Day around the corner, this would be perfect for your beautiful Mother!
I love the instant pot, the way it cooks large cuts of meats in a hour or so with the result being fall off the bone deliciousness. One of my favorites in the instant pot is "JJ's Instant Pot Pork Carnita's" so delicious and quick!
Now, here comes the topper for a weeknight FAST dinner! The salmon cooks in 3-5 minutes depending on the thickness and is moist and flakey!
Instant Pot Salmon with Dill
Duo 6
1 cup chicken broth
2 skin on Salmon Filets
2 T. melted butter or like
2 sprigs fresh dill chopped plus 2-3 for garnish
1 lemon cut in slices
salt and pepper
Spray your trivet with Pam or the like.
Pour the chicken broth into the Instant Pot and place the trivet in the pot.
Brush the butter on the filet and sprinkle with the dill. Sprinkle the salt and grind some fresh pepper or just put a few peppercorns over the top of the filet.
Place the filets into the IP and place a slice of lemon on top of each filet.
Lock on the lid and turn the valve to closed.
Push manual high pressure and set the timer to 3 minutes.
When the timer "dings" do a Quick Release.
Gently lift the trivet out with the filets. Place on the plates and garnish with fresh dill sprig and a wedge of lemon.
The salmon was flaky, moist, and delicious. I see us having this at least once a week. It’s healthy, delicious, and takes very little time and preparation. You can add some red pepper flakes or some chili pepper to take it up a notch if you love spicy or make a dill sauce with plain yogurt and fresh snipped dill.
I Have a abundance of beautiful fresh dill this year in my Scottsdale herb pot. I love rubbing a sprig between my fingers and smelling the fragrance of fresh dill.
I made this yesterday. Mom and family loved it! I made a pineapple salsa on top. Delish! Bailey
