No guilt Instant Pot Chocolate Applesauce cake


I am a self professed chocoholic and pretty much....everyone that knows me......knows! So, when I came across a version of applesauce cake with chocolate, I was skeptical. 



Skeptical NO MORE! This is a rich chocolate cake that is only 4 points on Weight Watchers Freestyle program! It is glutin free, sugar free (if you do not garnish with powder sugar) and dairy free!! I love this cake and serves a void when I am trying to lose a couple pounds, it is full of chocolate flavor, not too sweet and I feel like I am indulging in a sin....it is deliciously perfect!


No Guilt Instant Pot Chocolate Applesauce Cake
serves 8 

4 Weight Watcher Points per serving
includes the dusting of powdered sugar

2/3 cup roughly chopped dark chocolate, I used Guittard 72%
1/2 cup unsweetened applesauce,
2 large eggs
1 tsp. vanilla
1/4 tsp. salt
3 Tablespoons unsweetened cocoa powder
1/4 cup cornstarch

powdered sugar for dusting, optional



Pour 2 cups water into the Instant Pot. Place the trivet in.

Prepare a 6 inch cake pan with cooking spray or grease and dusting it with cocoa powder.

Melt the chocolate in the microwave, using a double boiler or putting the IP on saute and placing the chocolate in a glass bowl and place on trivet. Stir to melt.

Mix together the unsweetened applesauce, eggs and vanilla in a bowl. Add the cornstarch, unsweetened cocoa and salt and mix well.



Stir in melted chocolate.

Pour into prepared pan. Place on trivet in Instant pot .

Lock on lid, turn the valve to closed and set the time to 4 minutes high pressure for a molten center or 5 minutes for a firmer center. I did 5 minutes and got a firm center. When the timer goes off, so a quick release. Remove the cake and allow to cool to room temperature before turning out onto a platter. 

Dust with powdered sugar and garnish with a mint sprig. 

*To add a little non guilt sweetness I use Non fat  Cool Whip, Optional not included in points total- 1 point per 2 tablespoons

*I cut up into wedges, wrapped in plastic wrap and put into a freezer bag into the freezer for a little chocolate treat any time!
