Orecchiette with clams and Sausage
We are in Newport, Oregon enjoying the last bit of Summer. With the ocean in front of us, all I can think of is little neck clams....my favorite food! We went to the local fish market and I bought 3 lbs of clams. For Wee Bear, I proceeded to the grocery to buy hot Italian sausage, pasta and Parmesan. I had a idea for dinner........
Pasta and clams = a food hug in a bowl. Pasta is one of Wee Bear's all time comfort foods. He needs a "Noodles for life" Tee shirt!
Orecchiette with clams and Sausage
1 lb Orecchiette
1 lb Italian Hot Sausage
3 lbs little neck clams
1 c. dry white wine
1 cup heavy cream
1/4 + 2 tablespoons c unsalted butter
1 c Parmesan grated or shredded
1/2 cup parsley chopped
3 T olive oil
Cook the orecchietti according to package instructions. Drain and add 2 tablespoons of butter. Stir to coat the pasta.
Brown the sausage in a large skillet with 3 tablespoons of olive oil. Add the little neck clams and 1 cup of wine. Put a lid on, allow to boil. Lifting lid occasionally to stir. Once the clams have all opened (discard those that don't open), add the pasta, cream, butter and Parmesan. Stir and allow the Parmesan to melt into the broth.
Serve with a salad and crusty bread!
I can tell you this, I have had clams every day we have been here.....sometimes noon and night! This dish was so delicious, Wee Bear of course saved the left overs for lunch...sans the clams, as I ate them all!!!
