Hasselback Potatoes



This name for this yummy side dish comes from the Swedish word Hasselbacken, the Stockholm restaurant where it was first served.

Crispy on the outside and tender soft on the inside, the baked potato slices are similar to thick potato chips, but the slices are still attached to the base.

 

The seasonings and fillings for hasselback potatoes are completely up to your imagination! They can be as simple as a bit of salt and pepper, or stuff fillings between the slices. Use seasonings, herbs, butter, bacon, cheese or what ever you heart desires!

 

Hasselback Potatoes

8 T unsalted butter, melted
1/2 c. light olive oil
1/3 c. chopped chives, rosemary or scallions
salt and freshly ground pepper
6 Med potatoes
3/4 c. topping

Toppings-

herbs

butter

bacon

or this mixture is quite tasty!

Cheesy topping-

1/2 lb. left over cheese chunks
1 clove garlic
1/4 c. white wine
salt and pepper

Pre heat oven to 450 F degrees.

Stir together the butter, olive oil, chives and salt and pepper.

Slice the potatoes thinly, most of the way down, but, not through.

Put potatoes on a baking sheet and brush on the butter mixture. Make sure to get between the slices.

Bake 45-50 minutes, until tender and crisp.

Top with your favorite topping. for cheesy topping follow below!

Spoon on the topping, covering each potato. Bake for another 10 minutes, until cheese is golden and bubbly.

 

We had a wonderful Christmas in Couer d' Alene! Our son and family stayed with us throughout the holidays. It was so fun to wake up and see our grandchildren come down the stairwell to see the tree and gifts that Santa had left. Their little faces lit up with delight! 

After Christmas, many friends and family came from Washington and Oregon to enjoy and have fun! On New Years Eve I hosted 20 people for a sit down dinner at our home on the Spokane river. I served approximately 10 lbs of filet that I put on a rotisserie on our patio BBQ. My son-in-law, Ross helped with this, we made a great team!! All my guests helped by bringing appetizers or sides for this delightful dinner! Here are a few pictures!

  1. Where did you find that huge tenderloin? Please give time to cook on rotisserie as well. It is beautiful! I love this blog! C. Kamp

    1. Hi C. Kamp! I bought two tenderloin roasts at Costco. I cut the thinner ends off and saved them for another night(I made Filet of Beef Bourguignon with the ends).
