Trout Almandine


  This is the most delicious trout recipe EVER!!!




Trout Almandine

1 whole trout, cleaned, filet and de-boned
3/4 cup sliced almonds
1 c milk
1/2 cup flour
olive oil
3 T unsalted butter
salt and pepper
cayenne pinch (optional)
capers (optional)

Lay the trout in the milk for one hour in refrigerator. 

Remove from milk and dust the trout on both sides with flour.



On high heat melt the butter in a fish skillet as I have or a large round skillet will work just fine. 

Add the fish fillets and brown on both sides, this will not take long 2-3 minutes depending on thickness.



Remove and cover and keep warm. If you haven't a way to keep your fish hot, saute the almonds first.

Add your almonds to the pan and brown, giving the pan a little shake. Add salt and pepper and optional cayenne or capers.

Plate your filet and spoon the sauce over the top. Garnish with lemon and parsley. 

My changing look....LOL! Well, below is my current look, blonde. The Covid 19 pandemic has halted my progress to my natural "white/silver" hair. I started the process from my highlighted brunette color to go natural on January 6. The first thing my hairdresser said was, "go to the wig shop and try on a wig, make sure it is what you want to do. It is going to be a very long process to transform from brunnette to white without damaging your hair". This photo is the first wig I tried on, and is very close to my natural color.


I was happy with the color with my skin and started the process January 6, another appointment on February 4, and a 3rd appointment on March 5. Each time extracting safely the brown dye from my hair. April would have gotten me pretty close if not spot on the color above, but, my salon closed, due to Covid19. So, here it is folks! I'm a blonde! When it is safe, I will continue the process.

This is a dinner on our patio with family who is following protocol. We  are making the best of a very scary time. Note my new earrings, made by a small business on Etsy! This will be my souvenir of this pandemic, you can purchase here!
