It's tender, it's juicy and its full of flavor every time! You can make it on the rotisserie or in the oven....but, technically it's not rotisserie game hen....hahaha!
It's so easy and convenient to pick up a rotisserie chicken at the grocery store, but, I often find that the flavor is lacking and there are a lot of chemicals on the ingredients list. This homemade version I made with a Cornish Game Hen is simple to make and one of the best you'll ever eat!
Marinated Cornish Hens
2 Cornish game hens
Marinade
1/3 c. olive oil
1/2 c. lemon juice
1 T. ground pepper
2 tsp. salt
2 tsp onion powder
1/2 tsp garlic powder
4 sprigs fresh rosemary
Method
Split Cornish Game Hens lengthwise. Rinse hen halves; pat dry with a paper towel.
Marinade
Mix all the ingredients in a plastic storage bag.
Place the hens in the bag and squish it around so the hens are covered. Allow the hens to marinate for 3 hours or up to 8 hours.
Pre heat the grill.
Remove hens from marinade and place on grill rack. Discard the marinade. Cook in a covered grill for 45 minutes or until the hens reach 165 F internal temperature.
Once the hens are cooked through, remove from heat and serve with your favorite sides.
