The best tasting easiest Chili I have made. This is going to be my 'go-to' chili recipe from now on. Basic chili — but very good. I prepped in the morning after the "hubster" announced he would like chili for lunch. I used the beans I had in the pantry, so, use what you have! If you want more kick, add a chopped and seeded Serano pepper or some hot sauce. This chili was even better the next day!
Chili by JJ
2 lb. ground beef (90/10 or 93/7)
1 large onion diced
3 garlic cloves minced
2 tsp. Cumin powder
1 T. chili powder
1 tsp. garlic powder
1 tsp. oregano
1 1/2 tsp salt
1/2 tsp. freshly ground pepper
45 ounces of canned beans, drained and rinsed (I used what I had in the pantry kidney and chili)
30 ounces canned diced tomatoes, with their juice
10 ounce can Rotel or diced chilis and tomatoes (I used original Rotel, but, you could spice it up with "hot")
30 ounces of tomato sauce or puree
2 cans of beef stock
Saute the beef in a large skillet, breaking it up with a spatula over medium high heat.
Add the onion to the skillet and saute until tender (4-5 minutes) Add the minced garlic, Cumin, chili powder, garlic powder, oregano, salt and pepper. Cook for a minute.
Add the remaining ingredients; the beans rinsed and drained, the tomatoes, the Rotel and the beef stock. Stir on high for 4-5 minutes, lower the temperature and simmer for 30 minutes.
Season with salt and pepper to taste. Serve with a crusty bread!
Wee Bear was a happy boy! We finished the last of this delicious chili just before Thanksgiving and our flight to meet family in Cabo San Lucas, Mexico!
Spice Level This chili is just right for our liking but you can increase or reduce the spice level to your liking. For extra heat, add seeded and shopped jalapenos or for extra extra HOT leave the seeds in your jalapenos or add a few dashes of hot sauce or a sprinkle of chili flakes.
Ground Beef Any ground meat will work in this recipe from chicken to turkey. If your meat has a lot of fat, be sure to drain it before simmering.
Beer The flavor can be increased with beer. Substitute beer for one can of the broth. Feel free to skip the broth and use beer.
Swap the Spices Spice up your chili any way you’d like. To make a tex-mex chili, toss in a packet of taco seasoning.
We are still enjoying 80 F degrees in Mexico, however, our camera's are showing about a foot of snow on our deck in Coeur d' Alene, Idaho! Brrrrr!
With all the snow falling this is quick and delicious for lunch or dinner! Easy and will warm those little hands up to go back out and play!
Just in time! I made this this AM, kids and husband love it!
ReplyDeleteI made it yesterday everyone raved about it and we have enough for lunch today! Thanks! Jay
