Cherry Banana Egg Bite




Today, I revamped a old recipe that was labeled for babies and toddlers. Why, because it is a delicious treat for anyone!

This recipe is for everyone wanting a healthy treat or sweet breakfast on the go! It is also great for babies and toddlers for breakfast or a snack. And for those following a special diet. On Weight Watchers, this treat is "ZERO" points! Each bite/muffin is 24 calories, 9 calories from Fat, 1 gram of protein, 1 gram of sugar...no added sugar! Another plus is there are only 4 ingredients and you can make in your food processor!!


Cherry-Banana Egg bites

Makes 12

1 cup frozen Cherries, I used a mix of sweet and sour

3 large very ripe bananas (the riper the better)

1 1/2 tsp. vanilla extract

4 large eggs

 

Spread the cherries out on a pad of paper towels to drain and thaw. This can also be done in the microwave in a glass bowl to hurry the process, then spread on a pad of paper towels to thaw. Cut in each cherry in half if desired.

Preheat oven to 375 F degrees

Spray a muffin pan with cooking spray.

Put the bananas into the bowl of your food processor and pulse until mushy. Add the vanilla and pulse a few more times. Add the eggs and pulse until well combined.

Divide the cherries among the 12 cups. Pour the egg mixture into each cup, about 3/4 full.

Bake until the bites are domed and set. About 15-17 minutes.

Run a knife around each bite and remove to a wire rack to cool. I made 4 batches! I put onto a baking sheet and froze individually, then, put them into freezer bags. You can refrigerate for 4 days or freeze for 2 months.
