I love cucumbers and have revisited a old family recipe to bring it up to date. This is a very healthy side salad with a refreshing finish!
Cucumbers contain a little bit of vitamin K, which helps blood clot normally. They also have a bit of potassium, a mineral that helps regulate blood pressure. Cucumbers also pack a lot of water (they’re 96 percent water) which means they’re filling and low in calories. Onions also contain disease-fighting compounds.
Japanese Cucumber Salad
Ingredients:
2 sliced or ribbon cut English cucumbers
2 carrots, sliced in ribbons
1/4 cup chopped scallions
1/4 cup chopped cilantro
2 tbsp sesame seeds, optional
Dressing:
1/2 cup soy sauce
1/4 cup rice vinegar
1/4 cup Lemon Olive Oil
1 tsp grated ginger
1 tsp grated garlic
1 tbsp chili crisp or sambal
1 tbsp sugar
3 tbsp water
Mix dressing and toss with salad.
