Making a healthy breakfast at home can be easy, affordable and delicious. I like to eat a high protein breakfast and kind of shy away from carbs. I've experimenting with egg bites. A easy way to add protein is to add cottage cheese to the egg bites. My daughter Holly (aka Tink) recently made us egg bites for breakfast while we were on a ski trip to Sunrise in Arizona. She gave me the idea as she added cottage cheese to her egg bites. She had meatless egg bites, bacon egg bites and sausage egg bites.
Egg Bites
6 eggs
1 cup cottage cheese
sundried tomato
chives or scallions
1 cup of shredded cheese, cheddar, fontina, feta what ever you have
Spray a muffin pan with cooking spray.
Blend together the eggs and cottage cheese in a blender. Layer the cheese and meat of your choice in a prepared muffin pan, scallions, chives and sundried tomato. Any other veggies you may want in. Pour a hearty dollop of the blended egg mixture over each mound and add more shredded cheese on top. Bake at 350 degrees for about 15-20 minutes or until golden. Enjoy!

ReplyDeleteI made these a couple days ago, the entire family loves them! I made a variety of different ones in my muffin pan. They are all gone! Making more today.
