Serving up "Love" on Valentines day!
There is a lot of versions of this famous creamy chicken dish on the internet....because it is that delicious! It was coined "Marry Me Chicken" because the originator of the dish claimed it was marriage proposal worthy. It became a viral sensation.
Using ready to cook chicken breast strips, my version of Marry Me Chicken can be ready in 30 minutes. while I can't promise you a marriage proposal, the balance of flavors in this dish does make it hard to resist!
Marry Me Chicken
2 T olive oil
2 T unsalted butter
3 cloves of garlic
1 lbs of chicken breasts, cut in strips
1/3 cup sundried tomatoes
1 T Tomato Paste
1 cup Heavy Cream
1 cup chicken broth
2-3 Sprigs of fresh Thyme
Salt and pepper to taste
Heat a large skillet over medium/high heat. Add butter and olive oil and saute the chicken strips in small batches, do not crowd pan. Remove to a plate when done and season with salt and pepper.
Reduce heat to medium and add the garlic saute until fragrant...briefly. Add tomato paste.
Add chicken broth slowly, whisking to prevent lumps. Add the cream and Thyme sprigs. Simmer for 10-15 minutes until the sauce thickens and coats the back of a spoon.
Stir in the sundried tomatoes. Now add the chicken. Simmer for 5-7 minutes.
I spoon over butter noodles, spaetzels, rice or mashed potatoes and garnish with chopped parsley or basil.
